Process American and Cheddar Cheese can be kept for 1 year at a constant refrigeration temperature in its original package.  After opening, it can be kept well wrapped below 40 degrees for up to 3 - 4 weeks.  The date on the commodity cheese is a Date of Manufacture (DOM), not a Best If Used By (BIUB) date.
